food moment: PANCIT MIKI BIHON CON LECHON

Last month, February 24, my mom surprised us with a food treat in a giant “bilao” on her birthday from “ATM Noodle House”. By the way, “bilao” is a Filipino term which is a flat weaved basket usually used by native women in winnowing rice. Also called “winnow” in English term. Anyways, it’s the “pancit miki bihon con lechon” on a huge “bilao”. Of course, from the name of the food itself… it includes two kinds of  “pancit”, namely: “miki” and “bihon”. “Miki” is a flat thick kind of noodles while “Bihon” is the thinner one. It also has lechon in pieces including the roasted pig skin and its meat. Added with vegetables such as carrots, cabbage, “baguio beans” and “sitsaro” for a more healthy ingredient and to add color as well . Sauted with garlic and onions. With calamansi on the side included on its package when bought just in case you want to add a little citric taste on your “pancit”.

“Pancit” or “pansit” is a term for noodles in Filipino cuisine. Originated from the Chinese then adopted into Filipino dishes added with some twist and local ingredients found in the Philippines. There is also a belief in Philippine culture that having “pancit” on your birthday means long life. Maybe because “pancit” or noodles are long which made it associated in having a long life. That’s why it is not only served during birthdays but in other special occasions like baptismal, anniversaries, new year and other holidays as well.

How ironic! We should be the one surprising our mom yet we were the ones being surprised by her jumbo food treat. So, the next day, we surprised our beloved mom with a food party for the whole family most especially dedicated to her birthday with a big banner greeting her “Happy Birthday” as she enters the door.
